Here is a book you must read:
The Universe and the Teacup: the Mathematics of Truth and Beauty by K. C. Cole
And for the math-phobes in my friends list, there is nary a formula or multiplication sign in sight; however, it's an excellent discussion of how mathematical concepts, science, philosophy, our brains and the real world interact.
They should be building High School courses around this book.
Example:
"In the end, a correlation is no more than a hint that a relationship might exist. Without a plausible mechanism - that is, a way that one thing might cause another - it's practically useless. Therefore, it's unlikely that the surge in Wonderbra sales caused the 1994 Republican Congressional election sweep, even thought the trends were closely linked in time"
