Dec. 2nd, 2005 05:04 pmI must post something about Thanksgiving. We did our family's traditional Thanksgiving dinner - Grandma Reed's Spanish Spareribs and Rice.
I was designated Spanish Rice chef and I also wanted to make Aunt Polly's chocolate meringue pie (for the very first time). Bob and I got there early to help Mom clean up, then I started on the pie.
I cooked the pie filling at too low a heat, so it took longer than it should have. Which made me short on time for cooking the rice. Eep!. I "saute" the rice with onion to brown it before adding the liquid, so it can burn easily. I jacked up the heat to high, had Bob do all of the chopping and can opening and stirred my little heart out.
I was successful! The rice got brown without burning, then cooked to just the right doneness without being mushy or burnt. And Aunt Polly's pie came out perfect and was just as good as I remember. My bro's MIL also brought chocolate pie done with a similar recipe, but mine seemed richer and not so sweet.
I was especially pleased because I've had a bad record doing this - the rice has been undersalted and oversalted(badly) and once I filled in the white rice with brown rice - that was especially screwed up.
